“Torcicoda” – this southern wine from the legendary Tuscan Antinori family. It is made from Primitivo grapes. The grapes are harvested in early September overripe from old vines grown in Tenuta Maime di S.Pietro Vernotico. Due to the excellent balance of planted vines in Mayma, grapes reach the desired level of maturity and remarkable concentration of flavor and aroma.

Weather 2011 in Puglia characterized by two different profiles: the first period – from March to July – with frequent, but not heavy rains allowed the land to replenish, and the second period – from August to September – was hot and dry, which led to the ideal ripening , great concentration of sugar in the rich taste. After crushing and macerating with a regular and gentle pumping delestazhem continuous fermentation was carried out in steel containers for 15 days at a temperature of 28-32 ° C and a subsequent 20-day maceration. Then the wort has been moved into the barrels of French and Hungarian oak, where he implemented a malolactic fermentation and aging for 10 months. After bottling, the wine is stored another 8 months in the cellars of the winery.
